BLUEBERRY PUMPKIN SEED OVERNIGHT OATS

Ingredients

Overnight Oats

1 cup old-fashioned rolled oats

1 cup milk of choice

½ cup plain Greek yogurt

2 tbsp chia seeds

1 tbsp maple syrup or honey

1 tsp vanilla extract

½ tsp ground cinnamon

Pinch of salt

Toppings

1 cup fresh blueberries

¼ cup Good Sense Pumpkin Seeds (Pepitas)

¼ cup Good Sense Dried Cranberries

¼ cup Good Sense Dried Apricots, chopped

2 tbsp chopped roasted hazelnuts

Optional drizzle of honey

Instructions

  1. In a medium bowl or airtight container, combine the oats, milk, Greek yogurt, chia seeds, maple syrup (or honey), vanilla, cinnamon, and salt. Stir until well combined.

  2. Cover and refrigerate overnight, or for at least 8 hours, until thick and creamy.

  3. Divide the oats between two bowls.

  4. Top with fresh blueberries, pumpkin seeds, dried cranberries, dried apricots, and chopped roasted hazelnuts.

  5. Finish with a light drizzle of honey, if desired, and serve immediately.
