Ingredients
3 cups old-fashioned rolled oats
1 cup Good Sense Pumpkin Seeds (Pepitas)
¾ cup whole roasted almonds
½ cup chopped walnuts
½ cup unsweetened coconut flakes
2 tbsp ground flaxseed (optional)
1 tsp ground cinnamon
½ tsp sea salt
Wet Ingredients
⅓ cup pure maple syrup
3 tbsp honey
¼ cup avocado oil or melted coconut oil
1 tsp vanilla extract
Instructions
Preheat oven to 325°F. Line a large baking sheet with parchment paper.
In a large bowl, combine the oats, pumpkin seeds, almonds, walnuts, coconut, flaxseed, cinnamon, and salt.
In a separate bowl, whisk together the maple syrup, honey, oil, and vanilla.
Pour the wet mixture over the oat mixture and stir until evenly coated.
Spread the granola into an even layer on the prepared baking sheet. Gently press it down with a spatula to encourage large clusters.
Bake for 15 minutes, rotate the pan, then bake another 12–15 minutes until golden brown.
Remove from the oven and let the granola cool completely without stirring. This helps create crunchy clusters.
Break into pieces and store in an airtight container.
